We all enjoy making sweets at home and we always look for making new varieties of sweet. This particular sweets is a very special delight that is the Kaju Katli recipe.

Kaju Katli Ingredients 

  • Cashew nut – 1 1/2 cups
  • Water – 1/2 cup
  • Sugar – 3/4 cup
  • Cardamom powder – 1/4 Tsp
  • Ghee – 2 Tsp

Take a mixer and one and half cup of Cashew nuts or Kaju to it and grind it to a nice fine powder.

Make sure you grind it is nicely powdered. However don’t grind it for too long because the oil from the cashew nut will be released and become very sticky.

Keep the powdered cashew aside. Initially melt the sugar, for this in a pan add water and sugar and while boiling add a little cardamon powder

Once the sugar is completely dissolved, at this stage add the powdered cashew nut powder.

At this step ensure that you keep the flame on low throughout this process.

Keep mixing until the powder is well combined completely.

While doing this recipe, couple of things needs to be taken into account that you need to keep the flame on low till the whole process and then keep stirring and mixing the cashew paste continuously.

This will ensure that the paste does not stick to the pan and also does not change brown at the same time it has to be done slowly.

Once the cashew paste gets thickening add ghee to it. While the cashew paste come together beautifully and should become a nice thick mask.

When the mixture cools down it will turn into a dough consistency.

Take a butter paper and brush it with enough amount of ghee in it.

Setting the Kaju Katli

Transfer the dough to the butter paper and grease the dough with some ghee.

Close the butter paper and slowly roll it out using rolling pin make sure you roll out when the mixture is hot.

The open the butter paper and using a knife cut the dough into small bite size shape. Possibly if could cut it in diamond then nice.

Before cutting make sure that you grease the knife if ghee.
